MEAL 27: MUSTARD PRETZEL & PORK CRUMB CRUSTED CHICKEN TENDERS | MUSTARD COBB SALAD

It really doesn’t matter what season it is this meal is delicious any time of year! Simple but oh so tasty is a family favorite of ours Pretzel Crusted Chicken Tenders and Cobb salad.

Quite a few substitutions in here to make the dish healthier and keto friendly (for the lazy ketos who will save their carbs for the pretzels). Using stevia drops instead of a ton of honey, pork rind break crumbs instead of regular panko, and almond flour instead of white flour! All easy alternatives that you would never notice!

CHICKEN DREDGE

  • 1.5 LBS CHICKEN TENDERS
  • 1 CUP ALMOND FLOUR
  • 1/2 CUP PRETZEL CRUSHED TO PIECES
  • 1 CUP PORK RIND BREAD CRUMBS
  • 2 CLOVES FRESH GARLIC PRESSED
  • 1/2 CUP GREY POUPON ALL DIJONS ARE NOT CREATED EQUAL
  • 1/4 CUP RED WINE VINEGAR
  • 1/4 CUP COLD WATER
  • 2 TBS OLIVE OIL
  • 2 WEDGES LEMON JUICE
  • 1 TBS HONEY
  • 5 DROPS LIQUID STEVIA DROPPER FROM TRADER JOE'S

SALAD

  • 2 HEADS ROMAIN LETTUCE
  • 1 HANDFUL BACON CRUMBLES
  • 1 HEAD BROCCOLI CHOPPED
  • 1/2 PINT CHERRY TOMATOES QUARTERED
  • 1 AVOCADO CUBED
  • 1 HANDFUL ALMONDS SLIVERED
  • 1/2 RED ONION DICED

DRESSING

  • 2 CLOVES FRESH GARLIC PRESSED
  • 1 FULL LEMON ZEST GRATED
  • 1/4 CUP OLIVE OIL
  • 3 TBS GREY POUPON
  • 1/2 CUP RICE VINEGAR
  • 3 DROPS STEVIA
  • SALT & PEPPER TO TASTE

Instructions
 

DREDGING STATION

  • CREATE STATION WITH 3 BOWLS TO DIP THE CHICKEN
  • 1 BOWL IS ALMOND FLOUR
  • 2 ALL WET INGREDIENTS ABOVE
  • 3 MIX PRETZEL PIECES, PORK CRUMBS, AND 1/4 OF THE WET MIXTURE TO BIND
  • DREDGE THE CHICKEN IN THIS ORDER

SALAD

  • CUT CHOP AND DICE ACCORDING TO INSTRUCTIONS ABOVE

TANGY MUSTARD DRESSING

  • MIX ALL WET INGREDIENTS AND TOSS ONTO CUT SALAD

COOK CHICKEN

  • MULTIPLE OPTIONS: BEST OPTION IS IF YOU HAVE AN AIR FRYER TO CRISP THEM UP IN THE OVER ON AIR FRY 350 FOR 12 MINUTES . MAKE SURE TO FLIP
  • IF THEY ARE THIN TENDERS I SUGGEST QUICKLY CRISPING THEM IN BUTTER IN A PAN FOR ROUGHLY 4 MINUTES
  • TURN OVEN ON TO 400° AND GOOD FOR 20 MINUTES LAID OUT ON PAN

AFTER CHICKEN IS COOKED TAKE REMAINING DRDGE LIQUID THAT YOU SEPERATED TO THE SIDE AND DRIZZLE THE CHICKEN
